Egypt is a highly populous country with a population of almost 100 million all concentrated within the Delta region and around the river Nile. National milk production is provided mainly by family farms with small herds (a majority having no more than 3 or 4 dairy animals), mixing cow and buffalos. The dairy industry has been gradually emerged over the last 30 years as local and international companies, attracted by increasing demand and favorable policies (regarding the land access and financial markets) have developed industrial farms with large herds (thousands heads) on those territories.
The sector suffers from deep fragmentation making it difficult to adopt value adding processes. Dairy manufactured products such as soft cheese, semi hard and hard cheese face technical challenges related to the manufacturing process. Traditional soft cheese manufactured from crude milk, i.e., Domiati, Malawi, and Fayoumi are increasingly disappearing as market demand shift to inexpensive, low sodium, vegetable-oil based processed cheese. This caused many traditional cheese markets to switch to manufacturing processed cheese. Some Research and Development efforts are needed to develop traditional soft cheese manufacturing made from crude milk by helping manufactures use pasteurization, safer powder rennet, new packaging, and barcoding. With regards to the traditional Ras Cheese, the main problems facing manufacturers are weak consistency and the spongy texture – which may be due to the high initial acidity of raw milk or improper pressing leading to the formation of air bubbles in the wheel, leading to it breaking or cracking.
Egyptian dairy and diary manufacturing Micro, Small and Medium Enterprises (MSMEs) needs support to be integrated in value added processes through introducing value adding techniques, new products relevant to the market, improving the machinery and packaging, conducting technical training programs, on-the-job training or consultation services.
Egypt F2F is fielding an agri-business management volunteer expert who can start an Egypt based assignment for two weeks. The requested volunteer will help the targeted Egyptian dairy processors and enhance the capacity of Egyptian dairy processors to add value to their products.
During this assignment, the volunteer expert will meet with dairy processors representatives to assess their capacity to implement developed processing value adding solutions. Based on the volunteer’s assessment, he/she will develop tailored training materials and will conduct on-job training and technical assistance for the selected dairy processors (Semi hard and hard cheese) and stakeholders regarding the new techniques and solutions as well as approved product development, machinery and packaging. He/she is also expected to recommend follow-up trainings if needed.
Objectives and Outcomes of the Assignment
Assess the capacity of Egyptian dairy product manufacturing MSMEs to find the most appropriate / feasible solutions to be implemented in order to develop the processing value chain. These could be processing solutions, ingredients, packaging and/ or any other recommended high impact interventions.
Deliver the technology and know-how of the new techniques and solutions to create processed high value-added products from the Egyptian dairy milk and dairy product manufacturing.
Conduct on-the-job training and technical assistance for selected dairy products MSME manufactures and stakeholders regarding the new techniques and solutions as well as approved product development, machinery and packaging.
Deliverables. Each volunteer must submit a Final Report to the F2F Program, which includes the following sections:
A comprehensive work plan with detailed milestones & deliverables.
A detailed report of the Egyptian Dairy product Manufacturing “Soft Cheese, Semi Hard Cheese and Hard cheese) as stated in Main Tasks above; including the main findings, bottlenecks, constraints, recommended interventions for processing techniques, value adding solutions, packaging, processing unit design, marketing channels and potential opportunities and other.
Comprehensive training session & on-the-job training to transfer the newly developed techniques and solutions.
End-of-assignment report for the request organization management describing the work performed and results of the assignment, including names and contact information of the people and entities met during the assignment, participants in the interviews and consultations, focus groups, and roundtable meetings.
End-of-assignment PowerPoint presentation for the request organization management.
Reports and presentation will be provided according to templates to be provided by the request organization. (All Deliverables to be approved by Component C Team Lead)
A list of 3-5 specific and actionable recommendations for the host organization(s). The recommendations are very important to the program as we use them to track host adoption of recommendations and the impact on hosts’ farms and businesses. These recommendations will be reviewed during the debriefing session with country staff at the end of the assignment and the volunteer may make revisions to them in their Final Report.
A section listing the assignment objectives above and how they were met or why they were not met.
A short summary of the assignment with relevant photos that can be posted on the F2F volunteer blog.
Upon return to the United States, the volunteer is requested to communicate his or her F2F experience. Outlets to share the volunteer experience include home groups (e.g., civic and religious groups, professional associations, etc.), workplace presentations, local newspapers, community or workplace newsletters, personal blogs and social media sites. It is important to give recognition to USAID for funding F2F. At least two outreach events are requested and should be communicated to Aimee Foster at email@example.com or Sadie Paschke at firstname.lastname@example.org. Volunteers will be invited to join a volunteer group through LinkedIn and will receive occasional surveys requesting information about completed outreach activities during each period.
The recruited volunteer is expected to have the following skills and qualifications:
University degree in management, administration, economics, agribusiness/economics, social science, business or any other related fields.
Must have at least 10 years of experience in food industries, including Dairy and Dairy processing.
Must have prior experience in Value Chains development including mapping, assessment and analysis.
Must have prior experience with development projects of Dairy Value Chain in and processing and have conducted studies and analysis of the value chain.
Training Skills, including training in group settings.
Good writing and computer skills
Sufficiently physically fit, with appropriate medical clearance.
Familiar with conducting trainings through translators/interpreters
