Team Jeni’s is looking for a R&D Manager to join our Research & Development Team in assuring world-class quality in the world’s best ice cream.
The R&D Manager combines a passion for food science, food, culinary techniques, and flair for creativity in developing concepts, creating recipes, and producing benchtop samples as the first step in the commercialization process. The R & D Manager, with guidance from the Chief Commercial Officer and Jeni, will provide all formulas, product specifications, and training to ensure the “gold standard” is met in all phases of the manufacturing process and throughout the channels of distribution.
Based on creative inputs from Jeni & the Chief Commercial Officer, translate concepts into benchtop samples for approval. Approved “bench recipes” will be translated into commercial formulas for use by our Production Kitchen and Manufacturing Partners.
Conduct investigative sourcing for new product concepts requiring unique ingredients. In conjunction with Sourcing and Food Safety teams, coordinate the initial viability screening of potential production partners.
Participate in creative concept meetings and document findings for reference during the development process. Assure that each step of the development process is signed off on by Jeni and the leadership team.
Document all flavor development and recipe work to be used for reference in the commercial process, keeping a detailed record and notebook of all working formulas
Work on effective ways to retain flavor, texture, nutritional content, and product design throughout the manufacturing process and to the end of the product’s shelf life.
Work with the Quality team to ensure that all products meet the “gold standard” at the end of the product’s shelf life, primarily communicated via fully-documented product specification.
Support Sales and Marketing/Creative with benchtop samples to be used for customer presentations, PR and other internal/external needs
Assist QA with nutrition panels
Participate in packaging design reviews to evaluate proofs for accuracy and regulatory compliance.
Support scoop shops with innovative menu items and assist in training shop team members on effectively executing new offerings.
Conduct consumer testing and competitive cuttings to stay abreast of customer needs and competitive trends.
Keep abreast of current flavor and food trends by attending trade shows, reading food-related publications, and reviewing industry reports.
Translate food trend findings into innovative product offerings; bring creative leadership to the organization by making new product suggestions.
Support Operations and production partner teams with recipe improvement projects based on issues during commercial production.
Use customer and consumer product feedback, throughout all channels of trade, to improve our product performance. Support the customer advocates by answering product/ingredient related questions.
Lead the weekly new products meeting to inform various cross functional teams on new product development, reformulation, production, etc. and manage R&D timelines.
Support the commercial development process by attending test runs and initial commercial runs of new products and new ingredients.
The qualified candidate must have:
Four year degree in food science required. Ideal candidate also has culinary experience.
Minimum of 2 years progressively responsible product development experience in the foodservice or food production industry. Dairy manufacturing experience required.
Culinary, food styling, and trend analysis skills
Sensory analysis, consumer research, and prototype development abilities
Knowledge of ingredient functionality and food processing
Formulation development and scaling, concept translation, and development documentation capabilities
Project management, written & verbal communication, and presentation skills. Must be proactive and always willing to continuously learn.
Proficient in numbers/analytics, particularly Excel. Experience using Genesis a plus.
Labeling experience is a plus
